Easy Homemade Shortbread, Lemon Lavender and more

This week I am busy getting ready for our big Birthday Baptism Bash. Next week we celebrate my birthday, my sons birthday and my daughters baptism. We will have all of our extended family visiting so needless to day there will be lots of food and a pretty full house. With so many festivities and people to feed. I do my best to keep things tasty and simple. We don’t get to see my husbands side of the family very often as they are all out of state. When they are in town I like to spend as much with with them not be busy in the kitchen.

Over the years I have become a master planner and skilled at keeping my freezer stocked with lots of easy make ahead items. The advance prep allows me to relax with guests and still feed them well. Today I share one of my all time make ahead favorites. There is no better treat than easy homemade shortbread. This recipe is super simple. You just mix all the ingredients together, press into the pan and bake.

It is also wonderful because you can play with it and make many different and unique flavor combinations like Chocolate Cayenne, Orange Pistachio or  Lemon Lavender like I did for my party. The easy homemade shortbread has a soft and delicate crumb and sweet yet rich buttery taste. Best part this tender shortbread is surprisingly transportable and the texture actually improves the next day making it in ideal treat for any gathering. You can even make it far in advance and freeze it so you have it onhand to welcome any last minute guests. It pairs perfectly with coffee, tea and even wine.

Easy Homemade Shortbread, Lemon Lavender and More

Tender and delicate with rich flavor that will leave the house warm and smelling of butter.

1 cup unsalted cold butter (2 sticks cut into ½ in cubes)

½ cup sugar

1 ½ cups flour

¼ cup cornstarch

½ teaspoon salt

1 teaspoon vanilla

Preheat oven to 325

Line a 9in square, round or spring form pan with parchment paper

In the bowl of an electric mixer combine all ingredients. Starting at low speed mix for several minutes until mixture resembles a course meal with slightly damp crumbs but will hold together when pinched.

Pour crumb mixture into prepared pan and press firmly with a small juice glass or the back of a spoon tamping the crumb mixture together.

Sprinkle with extra teaspoon of sugar if desired.

Place pan on middle rack in oven and bake for 35-40 minutes until very light golden Cool in pan for 30 minutes, carefully run a butter knife along the side of the pan to loosen from edges and carefully invert to remove from pan. While still warm cut into desired shapes using a large knife and smooth downward cuts.

Variations:

Lemon Lavender:

Add zest of one lemon, 1 Tablespoon lemon juice and 2 Tablespoons food grade lavender

Chocolate Chip:

Mix in 1 cup chocolate chips before pressing into the pan. Option for chocolate coating, spread 1 cup chocolate chips over top while it is hot allow to melt and smooth over surface.

Chocolate Cayenne:

Decrease the flour to 1 ¼ cups and substitute ¼ cup coco powder. Mix in 1 teaspoon espresso powder and 1 teaspoon cayenne pepper.

Orange Pistachio:

Add the zest of one orange and ½ cup finely chopped pistachios

Butterscotch version 1:

Mix in 1 cup butterscotch chips before pressing into the pan.

Butterscotch version 2:

Substitute brown sugar for white sugar continue with recipe press into pan and sprinkle with ½ teaspoon coarse salt in place of sugar. For an upscale touch try pink Hawaiian salt.

It’s that time of year again, when friends and family come together and celebrate the year. Don’t let the good times end yet! Mix together a batch of homemade eggnog. Yes, there are store-bought versions, but making homemade eggnog is easier than you think. Spread the cheer, keep this on hand to serve warm or cold as guests stop by. This homemade eggnog will warm hearts of many.

I have been making this recipe for a few years now and although it is not exactly considered “healthy” or “low-calorie” It is made with real food ingredients and it is an amazingly delicious once a year treat. So live a little, indulge in homemade eggnog and enjoy all your have accomplished this year and the amazing things you have to look forward to.

  • 4 cups whole milk
  • 4 cups heavy cream
  • 12 egg yolks
  • 2 cups sugar
  • 1 cup spiced rum
  • 1 cup bourbon
  • 1 cup cognac
  • 1 teaspoon freshly ground nutmeg + more for serving
  • ½ teaspoon cinnamon
  • ½ teaspoon pure vanilla extract
  • pinch salt
  1. Combine milk and cream in a large sauce-pot. Heat over lowest setting slowly warming the mixture just until you see bubbles forming at the sides. Turn off heat and all to rest.
  2. In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. The mixture will turn pale yellow in color and fall from the whisk in “ribbons”.
  3. Whisk warm milk mixture slowly into the eggs.
  4. Stir in rum, bourbon, nutmeg, cinnamon and vanilla. Refrigerate overnight before serving.
  5. Serve warm or cold and garnish with fresh nutmeg for servin

Makes 12 cups.

*Note, after making this a few times I have found it gets even better with age as the alcohol tends to mellow out a little. The flavor seems to become richer and smoother. You can drink it right away but don’t feel bad if you have it leftover. It will keep for months and just keeps getting better. If you happen to find a bit of it in the back of the fridge come Valentines day don’t toss it out, it will be amazing! Enjoy!

**So, what to do with all the extra egg whites? It’s easy to mix up a batch or scramble egg whites, a frittata or an egg white quiche, but this time of year with the dry air it is perfect to make meringue. You can shape meringue into cookies, cups, or really any desired shape. It is difficult to make meringue in the summer as the warm humid air makes it hard for them to completely dry out.

It’s wedding season! How I love a wedding it is such a beautiful symbol of love and commitment. My cousin is getting married this summer. I recently went her wedding shower. Part of the invitation was to share your favorite recipe with the bride for her to make in her new home. Well, this proved to be a harder task for me than others. I have many favorite recipes. As I was digging through my best of the best, the ones I use all the time, I just could not decide.

She is allergic to nuts so thankfully that helped narrowed down a few but I was still so torn. I thought maybe a good “family recipe” would be nice, you know something my grandparents use to make that has sentimental value. Well, that was just as hard sorting though scraps of paper, partial recipes and the ones that seemed the best all contained nuts. I was at a loss. I did find some really great recipes in the process.

I finally decided to do something different. I started compiling my favorites in to mini menus that I will make a book of my favorites to start her new family off with. This process is taking a bit longer than expected so I am not quite done yet. I still needed something for the shower. I thought I would write her a recipe for a happy marriage.

Marriage is wonderful but just like being a mom it has its challenging moments. When getting married everyone always thinks it will last forever but statistics show much different. Most things that are good take effort to maintain. Commitment, love, understanding and forgiveness are needed in all healthy relationships. Here is my simple recipe for a happy marriage. Hopefully it will bring a smile to your face and help get you through those moments when you think, why did do this, I can’t handle this, and this is not what I signed up for. Life is not all sunshine and rainbows but if you do it right you have more sunny days than cloudy ones.

Recipe For A Happy Marriage

2 open hearts
4 cups of Love
2 cups of Loyalty
1 cup Faith
1 cup Kindness
1 cup Understanding

3 spoonful’s respect

3 spoonful’s trust

½ cup compassion

1 cup forgiveness (no substitutions)

½ cup thoughtfulness (not optional)

1 barrel of laughter

Hugs and kisses as needed

Combine two hearts in one home. Melt hearts with love and loyalty. Mix thoroughly with faith, kindness and understanding. Fold in respect and trust. When the mixture gets a little sticky or hard to handle add compassion and forgiveness while staying committed to the process, everything will smooth out with honest communication. Leave out blame and judgment, as these never taste good. Pour mixture into a healthy community with friends and family who love and support you. Sprinkle thoughtfulness on top. Bake for as long as you both shall live. Serve daily with heaping spoon of laughter, garnish with hugs and kisses as desired.

Simple Homemade Hot Cocoa

In my effort to eat more real and clean foods I am constantly adapting recipes to make foods fit my needs and busy lifestyle. I want to eat well but don’t want to miss out on any of the fun rich indulgences of the holiday season. I have found when you stick to real simple ingredients cooking is easier and often taster than store-bought comparatives. Here is my simple clean recipe for Hot Cocoa. It is quick, easy and delicious so snuggle up by the fire, sing some holiday songs and enjoy a clean cup and cheer with those you love.

Simple Homemade Hot Cocoa

Serves 4

  • 4 cups whole milk
  • ¼ cup high quality cocoa
  • ¼ cup honey
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract
  • pinch salt

In a medium saucepan whisk all ingredients until well combined and warmed to your desired temperature. Top with fresh whipped cream if desired.
